ChocoMocha Delight

Ingredients:

1 packet Medifast Dutch Chocolate Shake
6-8 oz cold water
3-4 ice cubes
1/2 tsp. Instant Coffee

Place ice cubes and water in a blender. Add the coffee, Medifast Shake, and blend for 10-15 seconds or until most of the ice cubes are crushed.

Chocolate Covered Espresso Bean Pudding

If you love chocolate covered coffee beans, you will like this one!

Ingredients:

  • 1 MF Chocolate Pudding
  • 1/2 cup Cold Coffee
  • 3 Ice Cubes
  • 1/2 tsp. Coffee Grounds
  • 1/4 tsp. Vanilla Extract
  • 1 tbsp. Sugar Free Chocolate Syrup

Blend all the ingredients together in a personal blender like the Medifast Healthmate Blender or Magic Bullet.

Rosemary Chicken

Ingredients:

1 small onion, chopped
3 stalks celery, cut into pieces
4 chicken breasts
1 t. dry rosemary or 1 T. fresh
1/2 head cabbage, cut into wedges
1/2 t. salt and pepper (or salt substitute)
1 c. tomato juice

Mix the chopped onion and celery, put 1/2 in bottom of roasting pan. Sprinkle rosemary on the chicken and place on top of the onion/celery. Place other veggies around the chicken. Sprinkle with salt and pepper and pour tomato juice over all.
Cover roasting pan and bake at 350 for 1 hour.

Boca Burger Salad

A healthly vegetarian lean and green option, that is perfect for the Medifast diet. Can be enjoyed hot or eaten as a convienient lean and green meal on the move.

Ingredients

  • 2 boca burgers (or equivalent: Morning Star Farms burgers, Garden burger, Quorn burgers)
  • ½ cup watercress
  • 1 cup romaine lettuce
  • 4 cherry tomatoes
  • 4 slices cucumber

Instructions

Grill the burgers as per the packet instructions.

Wash & prepare the salad and serve with the hot burgers.

Marshmallow Fluff

  • 2 Tbs. Toasted Marshmallow Sugar Free Syrup or Walden Farms Marshmallow Fluff
  • 3 ice cubes
  • 1/2 cup water

Cauliflower Pizza

  • 1/2 cup cooked cauliflower
  • 1 egg
  • 4 Tbsp. tomato sauce
  • 1/3 cups mushrooms
  • 10 pieces turkey pepperoni
  • 1/3 cup low fat mozzarella
  • Italian seasoning, salt and pepper to taste

Preheat oven to 45o F. Spray cookie sheet with non-stick spray. Cook cauliflower to where it is soft enough to mash and/or mix with hand mixer, drain well before mashing so it is not soggy! In a medium bowl, combine cauliflower and egg. Spread out on cookie sheet and bake crust for 15 min or longer for a firmer crust.  Heat tomato sauce on stove and cook chopped mushrooms in it, add Italian seasoning if desired. When crust is brown and firm, add sauce, cover with shredded cheese and pepperoni.  Place under high heat broiler until cheese is melted.  Recipe makes one lean & green. **The egg and low fat cheese are listed under meatless options for lean portion so it is legal!**

Spiced Muffins

Ingredients:

1 pkg. MF eggs
1 pkg. MF oatmeal
1 pkg. MF chai
1/2 tsp. baking soda
1/4 tsp. baking powder
Splenda and cinnamon to taste

1/2 cup Davinci gingerbread sugarfree syrup(you can mix water, splenda and ginger or cinnamon if you don’t have syrup)

Stir all ingredients in a bowl. Add a little extra water if you need more moisture.
Spray muffin pan with butter Pam and make three muffins. I sprinkled more cinnamon and Splenda on top.
Bake at 350 until a knife inserted comes out clean, around 10-15 minutes 
Each muffin is one MF meal.

Chocolate Muffins

Ingredients: 
2 packs of Maple & Brown Sugar Oatmeal 
1 packs of chocolate shake or hot chocolate  
2 teaspoons of baking powder 
1 1/2 teaspoons of distilled white vinegar 
1 teaspoons of vanilla extract 
2 tablespoons of egg beaters
1/4 cup of Da Vinci Sugar Free Chocolate syrup
Approximately 1/3 cup of water

Preheat oven to 350. Mix all together and spoon into jumbo muffin pan and bake for 20 to 25 minutes. Makes 3  jumbo muffins – each one counts as 1 MF meal, and 2 condiments.

Chocolate Cake

Ingredients:

  • Choose 1 chocolate flavored MF meal:  shake, pudding or hot chocolate
  • 2 Tbsp. water
  • 1/2 tsp. baking powder
  • 1 egg white or 2 Tbsp. Egg Beaters

In a cereal bowl whisk 1 egg white or 2 Tbsp. Egg Beaters with a fork
Add 2 tablespoons of water
Add 1/2 teaspoon of baking power – whisk with a fork
Add your MF meal packet – whisk with a fork

You can add flavored extract drops, if desired – such as, vanilla, almond, mint, etc.
Place it in the microwave in the very same bowl for a total of 1 and 1/2 minutes.
