Pork Roast

Prep Time: 10 mins (+45 mins marinating time)
Cooking Time: 30-45 mins

Ingredients

5 oz. pork tenderloin
2 teaspoon rosemary
2 teaspoon thyme
1 clove garlic, minced
Salt and pepper to taste
1 tablespoon olive oil
8-10 medium asparagus spears

Method

Arrange asparagus on roasting pan. Mix herbs and spices together. Brush pork with oil and rub in spices. Let sit 45 minutes in refrigerator. Top asparagus with pork and roast at 325 for 30-45 minutes or until internal temperature reaches 150°F.

This recipe makes 1 serving.

Oriental Lettuce Wraps

Prep Time: 15 mins (+15 mins marinating time)
Cooking Time: 10 mins

Ingredients

5 oz. lean ground pork tenderloin
3 rehydrated dried shitake mushrooms
1 tablespoon canola oil
1 tablespoon rice wine flour
1 tablespoon low sodium soy sauce
2 slices minced ginger
2 cloves of garlic
1 tablespoon fish sauce (found in Asian food stores)
3 lettuce leaves
1/2 cup mung bean sprouts

Method

Marinade pork with rice wine vinegar, soy sauce, fish sauce for about 15 minutes. Saute ginger and garlic with canola oil. Add meat and sauté until cooked completely.

Wrap meat, sprouts and mushrooms in lettuce leaf.

Cajun Grilled Pork Chops

Cooking Time: 15 mins

Ingredients

4, 5oz. boneless pork center loin chops
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon cayenne powder
1 teaspoon rubbed sage
1 tablespoon paprika
6 cups green beans

Method

Combine seasonings. Coat chops with seasoning. Grill over medium heat, turning once. Serve with steamed green beans or your favorite Medifast-approved vegetable.

This recipe makes 4 servings.

Cumin Pork

Pork is often perceived as a fatty meat, but in fact these lean cuts are perfect for a delicious lean and green meal.

Ingredients

  • 6oz pork tenderloin
  • 1 tbsp garlic, crushed
  • 1 tsp cumin seeds
  • ¼ tsp black pepper
  • salt
  • 1 cup brocolli
  • ½ cup zucchini

Instructions

Trim any fat from the pork.

Crush garlic and mix with cumin, pepper and a little salt. Spread mixture over pork and allow flavors to infuse overnight.

Grill pork until is starts to go brown (approximately 8 minutes per side).
