Mesquite Grilled Shrimp

Prep Time: 5 mins
Cooking Time: 20 mins

Ingredients

7oz. large shrimp
3/4 cup sliced zucchini
3/4 cup summer squash
1 tablespoon mesquite seasoning
1 tablespoon olive oil
oregano (if desired)

Method

Place foil on grill. Spread zucchini and squash on grill and sprinkle with oregano. Brush shrimp with 1 tablespoon olive oil and sprinkle with mesquite seasoning. Grill turning once.

This recipe makes 1 serving.

Garlic and Mushroom Shrimps

These shrimps can be prepared in a skillet or for an extra fast version in the microwave. This is a great meal to whip out when you need lean and green in a hurry.

Ingredients

  • 7oz small shrimps
  • ½ cup mushrooms
  • 1 clove garlic, finely chopped
  • 1 tsp olive oil
  • ½ tsp lemon juice
  • ½ tbsp chopped parsley

Mircrowave Instructions

Clean mushrooms, leaving them whole but removing the stalks.

Place mushrooms, garlic, salt, pepper, lemon juice and oil in a microwave proof dish with a lid. Cook for 2 minutes on high (700-800 watts).

Add the shrimps and cook for a further 1 minute on high, stirring half way.

Check that shrimps are cooked and cook for another 30 seconds on high only if required.

Frying Instructions

Clean mushrooms, leaving them whole but removing the stalks.

Heat the oil in the skillet. Add mushrooms, garlic, salt, pepper and lemon juice. Cook for 2 minutes.

Add the shrimps and cook for a just under 1 minute, when the shimps begin to change color.

Check that shrimps are cooked and cook for another 30 seconds if required.

Chinese Style Shrimp

These Chinese Style Shrimps look and taste fabulous.

Ingredients

  • 7oz shelled shrimps
  • 1 tsp chopped fresh ginger
  • 1 clove chopped garlic
  • ½ cup chopped zucchini
  • ½ small onion, chopped
  • ½ cup red pepper
  • 1 tsp sesame seeds  
  • ¼ teaspoon dried chili flakes
  • 1 tsp bouillon
  • 1/3 cup water
  • ½ tsp wine vinegar

Instructions

Mix garlic, ginger with shrimps and leave for at least 20 minutes.

Mix bouillon, chili flakes and water in a bowl.

Heat skillet and spray with 1 cal spray. Cook shrimps, garlic and ginger until shrimps just change color. Less that 1 minute in a hot pan. Transfer to plate.

Rinse skillet.

Spray skillet with 1 cal and cook onion for 1 minute, then add zucchini and pepper and cook for a further 1 minute.

Add the shrimps and heat through completely.

Serve decorated with sesame seeds.
