Perfect Pancake

Ingredients:

  • 1 pk. MF Oatmeal – Apple Cinnamon or Maple Brown Sugar
  • 2 Tbsp. Egg Beaters
  • 1/2 tsp. Vanilla Extract
  • 1 pk. Splenda
  • 1/4 tsp. Baking Powder
  • 1-3 Tbsp. Water
  • Dash Cinnamon
  • Pam Spray
  • I Can’t Believe It’s Not Butter Spray (if desired)
  • Sugar Free Pancake Syrup (if desired)

Blend oatmeal into flour consistency first, if desired.  Combine dry ingredients in small bowl.  Add Egg Beaters  and vanilla then add water as necessary until it has the consistency of batter.  Pour batter into pre-heated skillet coated with Pam.  Spread evenly with spatula, if necessary.  Cook for several minutes until browned on the first side, then flip and cook until browned on second side.  Top with butter spray and sugar free syrup, if desired.

Scrambled Egg Perfection

Pour Scrambled Egg packet into a bowl.  Add 1/2 cup water as directed.  Mix thoroughly and let sit for several minutes.  Add 1/4 cup Egg Beaters if desired (counts as part of your “lean”portion for the day). Cook in preheated skillet sprayed with Pam.

Salsa, spices, catsup, etc.  may be added (see condiment recommendations)

Tropical Paradise

Ingredients
1 packet Medifast French Vanilla shake
1 teaspoon sugar-free pineapple syrup
1 teaspoon sugar-free banana syrup
1 teaspoon sugar-free coconut syrup
1/2 cup lime flavored water
8-10 ice cubes made with tropical flavored water
 
Method
Pour ingredients in blender and mix until smooth.

Crock Pot Curry Cauliflower Soup

4 servings 

1 lb. cauliflower florets
1-3/4 lbs. (28 oz) undrained canned tomatoes, diced or crushed
2 cups prepared vegetable or beef bouillon
1 chopped onion
1/2 tsp. garlic powder
2 tsp. curry powder
1/8 tsp. ground cumin

Combine ingredients in a crock pot on high heat. Cover and cook about 5 hours or until cauliflower is tender. Add salt and pepper to taste. Serve hot or cold.

Use a potato masher to mash the cauliflower before serving. It’s like eating a spicy tomato soup with rice. Or allow the soup to cool, puree in a food processor, reheat and serve as a “creamy” soup.  Serve with grilled chicken or other “lean” option.

Chili Perfection

Ingredients:

  • 4oz water
  • chili packet
  • 1/2 tsp Better than Bouillon chili base
  • dash chili powder
  • dash dried onion

Combine 4oz water, chili packet, Better than Bouillon chili base, dash of chili powder, dash of dried onions, cook on low for 20-25min on the stove and it comes out perfect!!!

Mexican Chicken

3 chicken breasts
1 can diced tomatoes
2 green chilis
2 TBSP chili powder
1 tsp cumin
hot sauce

Spray a large, frying pan with non-stick spray and cook the chicken breasts 5-7 minutes/side, just enough to put some brown on them.  Add can of tomatoes, chilis, and spices, turn the heat to simmer, put a lid on the pan, let cook for 20 minutes. If tomatoes stick, deglazed with some water and about a half-cup of chicken stock . Pulled the chicken apart and let it stew some more (5-10 minutes).

Serve with additional salad to complete the meal.

Hot Cocoa Viennese

1 packet Medifast Hot Cocoa Supplement
1/4 tsp. Cinnamon (powdered)
6 oz. hot water
1/4 tsp. Vanilla Extract

Empty Medifast Supplement into a mug or cup. Stir cinnamon into dry powder. Add hot water and extract. Stir until dissolved. Allow drink to cool for a few minutes to blend flavors. Stir again.

Orange Coconut Cooler

1 packet Medifast Orange Delight Supplement
6-8 oz cold water
3-4 ice cubes
1/4 tsp. Coconut Extract

Place ice cubes and water in a blender. Add the extract, Medifast Supplement, and mix for 10-15 seconds or until most of the ice cubes are crushed.

Mocha Almond Cooler

6-8 oz cold water
3-4 ice cubes
1-2 tsp. Almond Extract

Chocolate Covered Cherry Chiller

1 packet Medifast Dutch Chocolate Supplement
6-8 oz cold water
3-4 ice cubes
1/8 tsp. Black Cherry Unsweetened Kool-Aid (dry mix)

Place ice cubes and water in a blender. Add the Kool-Aid, Medifast Supplement, and mix for 10-15 seconds or until most of the ice cubes are crushed.
