Cauliflower Pizza

  • 1/2 cup cooked cauliflower
  • 1 egg
  • 4 Tbsp. tomato sauce
  • 1/3 cups mushrooms
  • 10 pieces turkey pepperoni
  • 1/3 cup low fat mozzarella
  • Italian seasoning, salt and pepper to taste

Preheat oven to 45o F. Spray cookie sheet with non-stick spray. Cook cauliflower to where it is soft enough to mash and/or mix with hand mixer, drain well before mashing so it is not soggy! In a medium bowl, combine cauliflower and egg. Spread out on cookie sheet and bake crust for 15 min or longer for a firmer crust.  Heat tomato sauce on stove and cook chopped mushrooms in it, add Italian seasoning if desired. When crust is brown and firm, add sauce, cover with shredded cheese and pepperoni.  Place under high heat broiler until cheese is melted.  Recipe makes one lean & green. **The egg and low fat cheese are listed under meatless options for lean portion so it is legal!**

  1. I tried it and the “crust” fell apart when I tried to eat it and I follow the instructions. I lacked flavor as well. I was so looking forward to having a pizza type thing but I would not recommend.

    • make sure when you mix the crust that you add a seasoning like ms. dash it really pumps up the flavor and another thing you can add to a nice firm crust is some of the mozzarella cheese, i’ve seen it in another recipe (1/4-1/3cup) and the crust is firm and doesnt fall apart while eating. the only other thing that i see in this recipe that might have caused the falling apart is too much on top maybe slightly less sauce and cheese.

  3. I made this the other night…same thing but from another recipe which included some cheese & herbs. It came out perfect. If you don’t drain the water out of the cauliflower thoroughly, though, it will be soggy and terrible. Also, I used vegan cheese, and though it doesn’t melt as well as milk cheese, I think it had a big part in keeping things together. My picky husband and my old-fashioned mother in law both loved it.

  8. I am fairly certain cheese is NOT allowed on Medifast. I say fairly certain, but I mean.. certain. This diet is expensive, I am going on month 3, down 33 lbs. I don’t “cheat.” If you want to cheat, don’t spend a crap ton of money on Medifast, do something else. If you were on a keto or paleo diet, this would work.

    My husband and I really enjoy this pizza. We both are in our 3 rd month on take shape for life and find this pizza delicious. It turned out perfect, you could even “fold” the slices! We have fixed 2 times and I double the recipe. I use the food processor on the steamed cauliflower and the crust is great. Try using a pizza stone too.
